Tosa-ichi

The family of high carbon steel edge kitchen knives cladded & forged by blacksmith. Because the outer layer of the blade is made of extremely soft iron, it’s so easy to sharpen on your demand, and also its traditional core steel provides us with sensitive cutting touch. Note: It is easy to get rusted, if the blade is not properly cared. (Several series of the blades have corrosion-resistant feature since their surface is cladded with soft stainless.)

HITACHI's finest YSS

YSS(Yasugi Specialty Steel) is produced by Hitachi Metals, Yasugi works in the San’in region of Japan, a place renowned for the high purity of its iron sands. And their high carbon steels are classified as Shirogami and Aogami for its chemical composition & additives. Either is characteristic heritage steel created by Hitachi’s intelligent alloy design, smelting expertise passed down tradition of Tatara iron-making for Japanese sword. Aogami is the reformed group based on Shirogami by adding Chromium & Tungsten for stable heat-treatment and wear-resistance feature. The group is further segmented into Aogami 2, Aogami 1, Aogami Super, whose Carbon, Chromium, Tungsten blending ratio is much higher by the order, and each element effects to the blade HRC hardness and wear-resistance.

Aogami  Super  is  outstandingly  rich  in  Carbon  composition (1.45%) which directly effects to the blade hardness and also containing 0.4% Vanadium as the additive for micronizing metal grains to add the blade toughness. Thus Aogami Super is rated as the most advanced carbon steel for the modern knife making.

Aogami Super / SUS405 Clad Steel

The core for Tosa-Ichi Shadow series, Aogami Super’s edge hardness is HRC63. The combination with the soft stainless SUS405 outer layer provides further easiness to the blade sharpening. This stainless part matte black is the stark color after the quenching process.

It’s the common oxidized metal color with the forged oxide iron skin known as Kuro-uchi traditional blades. In another words, Tosa-Ichi Shadow is the corrosion-resistant armored “Neo Kuro-Uchi“. Nickel-Silver Bolster gives gentle appearance to the series as well.
